I purchased a little container of organic “peanut butter spread” recently. It was so decadent, creamy and rich that it disappeared way too quickly. With a tear in my eye, I went to recycle the glass container and noticed that the only ingredients were- peanuts, coconut oil, chia seeds. Psssha! I knew I could create my own version at home (for half the price and twice the fun).
As with all my nuts, I store them in the freezer. The oils in the nuts make them quick to go rancid and they can be susceptible to mold. I soak all my nuts before using to remove the enzyme inhibitors and phytic acid present on the nuts. This increases nutrient
absorbability and makes the nuts easier for us to digest. I buy my nuts in bulk and save time by soaking them all at once. I then dry and freeze where they wait for me to pull them out, little by little, as needed.
If possible, purchase Valencia peanuts which are grown in New Mexico and are free from the aflatoxin mold that can contaminate regular peanuts. If you use regular peanuts, store your peanut butter in the fridge. It will separate, but you can easily stir it back together. This slows down the growth of aflatoxin if there is any present. If you are really terrified of aflatoxin, use almonds for this recipe. Because of this risk, peanut butter should not be enjoyed as an everyday food, but on occasion. Rotate your nut butters! There are so many delicious choices to try 🙂
Peanut or Almond Butter Chia Spread:
– 4 cups peanuts (Valencia, if possible), or 4 cups almonds
Pre-heat your oven to 350°C. Spread your nuts in a single layer on a baking pan. Place in oven. Stir occasionally, until nuts are browned in spots, about 10 minutes. Your nose will tell you when they are done. Once you are able to smell the nuts, they are done. Take nuts out of the oven and cool briefly. Add to food processor with:
– 2 T coconut oil
– 1-2 T coconut sugar (start with 1, taste, and add the 2nd if you feel it needs it)
Process until nut butter is creamy and smooth. Scrape but butter into a mason jar (or other container of your choice). Stir in:
– 2 T chia seeds
Store in the fridge. Enjoy on everything ❤ ❤
