Today’s recipe is a silent protest to Mother Nature. We are ready for summer!
This refreshing lemonade screams warm weather, blue skies, and long days. This is not the syrupy sweet lemonade of your childhood. There is no refined sugar and the lemon flavour is subtle. This is updated lemonade, lightly sweetened, with the faint herbal note of lavender in the background. Lavender has a well earned reputation for it’s calming and relaxing properties. It has long been used to reduce anxiety, ease tensions and dissipate stress. The scent alone is enough to have powerful effects on our mood and wellbeing.
I am lucky enough to have two big lavender bushes growing in my backyard. They provide me with enough flowers to dry for use throughout the year. They grow abundantly here in BC. Once you start looking you will see them everywhere. When I lived in an apartment I would often take walks to a nearby parking lot with a plastic bag and my shears in my pocket (shhhh!). Those lavender bushes love a good prune 😉 If you have a yard or even a small deck I encourage you to grow your own. Not only are they beautiful, but the flowers can be used in so many ways. I use some for cooking while others I reserve for making my own bath products or simply boiling on the stove to fill the house with the most incredible scent.
Enlisting the help of little fingers to prune the bushes
Honey Sweetened Lavender Lemonade:
– 1 cup water
– 1 small handful fresh lavender or 2 T dried
Heat water and lavender to just under boiling. Cover and set aside until lukewarm. When lukewarm add:
– 1/4 cup honey (preferably raw and local. Do not even think of heating the honey over lukewarm! You will destroy the precious enzymes and health promoting properties)
Stir until the honey is well combined with the water. Add to your jar/jug with 6 more cups of water. Add in:
– the juice of 1 lemon
– 1 lemon thinly sliced (since we are leaving the rind on, buy organic to prevent pesticides on the lemon skin from contaminating the lemonade. If you cannot find organic omit the thinly sliced lemon and add the juice of 2 more lemons instead)
Combine well. Place in fridge to cool. Enjoy ❤ ❤
