Pineapple Love is Watermelon Heaven’s sassy cousin. It’s thicker, creamier, and packs a punch.
Even though we are in June, here in Canada it is cold and rainy. Great breeding ground for colds and flus! Today I was craving something that would give me a big hit of vitamin C to boost my immunity. My latest go-to “sick food” is pineapple. Pineapple is actually richer in vitamin C than oranges which makes it a potent germ buster. 1 cup of pineapple contains 131% RDA vitamin C which not only fights off any nasty bugs, but can also repair collagen keeping you looking young and gorgeous. Among many other benefits, pineapple is the only known source of the enzyme bromelain which has been shown to improve digestion, reduce inflammation in the body (alleviating joint pain, arthritis, and inhibiting tumor growth!) This recipe is a quick, easy and delicious way to enjoy this super fruit.
–1 pineapple, peeled and cored
–1 cup purified water
Note: You will only need 1/2 of the pineapple. Store the other 1/2 in your fridge or freezer for the next time you crave this recipe. Depending on your taste buds and the ripeness of your pineapple you may need to add a tiny drizzle of honey.
Blend 1/2 of the pineapple with the water. Add more water to reach desired consistency. Sip your way to improved immunity. Enjoy ❤ ❤
*Optional add ins: mint, basil, cilantro, ginger, or a pinch of cayenne pepper.
Once you’re healthy try this recipe adding a few ice cubes and a splash of coconut milk (hey, I’m not watching, add a drip of rum 😉 ) to the blender for a healthy piña colada.
